  • cherry tomatoes 12 ounces
  • extra-virgin olive oil 3 tbsp
  • feta cheese 6 ounces
  • garlic 2 cloves
  • Italian seasoning 0.5 tsp
  • kosher salt 0.5 tsp
  • pepper 0.25 tsp
  • Spaghetti squash 2 Small
Preheat
Preheat oven with rack in center position
🌡️ 204°C
Prep the squash
Halve lengthwise, remove seeds, Drizzle with oil and season.
Stuff the squash
Place 1 feta piece in cavity of each squash. Divide tomatoes and garlic evenly between cavities. Drizzle with oil
Bake
Bake until squash flesh is tender and tomatoes have burst, 50 to 55 minutes

Drizzle
Drizzle with remaining oil
Scrape and serve
Sprinkle with remaining salt. Transfer each squash to serving plate. Using a fork, scrape strands of squash flesh away from shells. Toss strands with tomatoes and feta, mashing sauce to desired consistency
